Home-made Pizza Bread

I made pizza bread for lunch a couple of days ago. It’s easy peasy. I used organic bread as the crust. As for the topping, I used minced chicken meat cooked in blended tomatoes and big onions, which was the leftover food from the previous night’s dinner. A minute before I switched off the toaster, I put a slice of Kraft cheese on top.

The outcome? Delicious. Both the gals loved them. Even Miss Spitty Spat Sherilyn finished her slice without spitting.

Pasta

Yesterday, I cooked penne pasta with blended tomatoes, bombay onions and minced chicken meat for the gals’ lunch.

Even Ms Pukey Spitty Spat Sherilyn loved it and finished her small bowl of pasta, though she spat out some of the chicken meat.

For instant quick and easy to cook spaghetti sauce, can also try Prego Tomato and Basil spaghetti sauce. Taste better than my homemade blended tomato sauce but packed with additives.

Cool Cucumbers

Another healthy snack for my lil’ ones to munch on…. cool Japanese cucumbers. I normally cut some cool cucumbers for us to munch when I have a heaty dish on my menu like pan-fried tempeh, homemade chicken nuggets or pan-fried fish. The cool cucumbers help to chill-out the body and help keep sore-throat at bay.

Sherilyn my lil’ greens lover can even gobble up 1 whole baby cucumber all by herself.

Glass Noodles

Alycia and Sherilyn had glass noodles with homemade fish paste and vegetables cooked in ‘sharks’ fins melon’ soup (a type of melon that resembles sharks’ fins after it’s boiled) for lunch yesterday. The gals love glass noodles and all types of noodles, especially noodles that are fried as well as pastas, macaroni and spaghetti.

Mac & Cheese

Alycia and Sherilyn love macaroni & cheese to bits. I used to buy the instant ones like San Remo or Kraft’s Mac & Cheese but I don’t quite like the additives inside. So with a little creativity, I cook my own mac & cheese for them, which is more wholesome, though the cheese that I put in has preservatives, but I’ve got no choice since most off-the-shelf cheeses have preservative in them.

This is the mac & cheese that I cooked for lunch yesterday with home-made fish paste and chopped french beans cooked in lotus root soup, formula milk powder, some butter and 1 slice of Kraft Light cheese.

And this small bowl is for Sherilyn.

Wholesome Breakfast

This is what the gals had for breakfast today :

Steamed Japanese sweet potato, Alycia’s favourite. Good source of fibre, complex carbohydrate, anti-oxidant, Vit A.

Organic wholewheat bread with red bean paste filling. Good source of fibre, iron and protein (red bean), complex carbo and calcium.

Hard-boiled Omega eggs with organic soya sauce. Rich in protein, iron and iodin.

Healthy Snacks

Pine nuts and pumpkin seeds.

Sherilyn counting her pine nuts away as she pops each nut into her mouth.

I always stock up boxes of healthy snacks in my house for the gals to munch on when their little tummies rumble or simply to use as baits to stop a toddler’s meltdown.
Alycia and Sherilyn’s favourite snacks are seeds and nuts of all kinds, especially pine nuts and pumpkin seeds. Seeds and nuts are the healthiest choice of snacks I can think of coz seeds and nuts are loaded with protein, calcium, fibre and good oils. The gals love peanuts too but I try not to give them too much coz peanuts can be heaty. So if I want to eat peanuts, I only eat when my brats are asleep!

Our Lunch

This is what we have for lunch today :

A lung-nourishing soup…. ‘loh hon koa’ (a brown black dried fruit with seeds inside) boiled with snow fungus, ‘mutt zhoa’ (dried honey dates), some red dates, ‘kei chee’ (wolfberries) and kampung chicken (free range).

Stir-fried yee meen with diced chicken breast, tofu pok (tofu puff), vegetables, bean sprouts, 2 eggs and msg-free soya sauce. This is Alycia’s favourite dish. She loves yee meen and calls it ‘magger mee’. Whenever she sees her kakak eating instant noodles, she will drool and swallow her saliva as she stands next to her kakak and stare at her as she puts each spoonful into her mouth, with eyes fixated on the noodles. So hor lin, as though she is so famished and starved. Then she will say “kakak, tomorrow you must cook magger mee for me to eat”.
Each time we go to the sundry shop, she will beg me to buy yee meen for her. But I don’t really fancy buying yee meen too often coz it’s not that healthy.

Wholesome lunch

My lunch menu for my maid to cook yesterday was a wholesome one. This is what the gals had for lunch yesterday:

Oat meal cooked in ABC & sweet corn soup. I added some homemade chicken nuggets (leftover from the previous night’s dinner), chopped french beans, cheese and sprinkled with some pine nuts. I use pine nuts as the ‘bait’ and incentive for Alycia to eat the oats coz lately, Alycia just hates to eat oats and porridge. Perhaps she has been eating these stuff almost everyday the moment she turned 6 months for the next 2 years till she got really sick of them. But sometimes when I run out of ideas for lunch, I just cook them something really nutritious and quick like oat meal.
