Sherilyn whipped up a big tray of grilled vegetables on Monday morning to make a simple Bibimbap bento to bring to work. I ate some of the grilled veggies for my lunch and hubs ate the remaining the next day. This is my favorite kind of meal and I can eat this every day.


Our current favorite rice – organic red rice and black rice cooked with Japanese sweet potatoes. We have this for dinner almost every day.
Red rice and black rice are considered nutritious because they are whole grains that retain the bran, germ, and endosperm of the rice kernel, unlike white rice which has been stripped of these nutritious parts. This means that they are rich in fiber, vitamins, minerals, and antioxidants.
Red rice gets its distinctive color from anthocyanins, which are powerful antioxidants that can help protect the body from damage caused by free radicals. Anthocyanins have been linked to a reduced risk of heart disease, certain types of cancer, and cognitive decline.
Black rice is also high in antioxidants, including anthocyanins, which give it its deep purple color. These antioxidants have been shown to have anti-inflammatory and anti-cancer properties. Black rice is also a good source of iron, which is important for maintaining healthy red blood cells, and magnesium, which is important for maintaining healthy bones and muscles.
