Throwback Food Snaps

Sherilyn whipped up a big tray of grilled vegetables on Monday morning to make a simple Bibimbap bento to bring to work. I ate some of the grilled veggies for my lunch and hubs ate the remaining the next day. This is my favorite kind of meal and I can eat this every day.

Organic sweet corns, pumpkin, Jap sweet potatoes, shimeji mushrooms, zucchini, carrots, big onions and garlic, seasoned with ground black pepper, salt and lots of olive oil.

Our current favorite rice – organic red rice and black rice cooked with Japanese sweet potatoes. We have this for dinner almost every day.

Red rice and black rice are considered nutritious because they are whole grains that retain the bran, germ, and endosperm of the rice kernel, unlike white rice which has been stripped of these nutritious parts. This means that they are rich in fiber, vitamins, minerals, and antioxidants.

Red rice gets its distinctive color from anthocyanins, which are powerful antioxidants that can help protect the body from damage caused by free radicals. Anthocyanins have been linked to a reduced risk of heart disease, certain types of cancer, and cognitive decline.

Black rice is also high in antioxidants, including anthocyanins, which give it its deep purple color. These antioxidants have been shown to have anti-inflammatory and anti-cancer properties. Black rice is also a good source of iron, which is important for maintaining healthy red blood cells, and magnesium, which is important for maintaining healthy bones and muscles.

Red rice, black rice and Jap sweet potatoes cooked together in the rice cooker. The red and black rice texture is chewy (like glutinous rice) and the rice is imbued with the sweetness and aroma of the sweet potatoes.

Hubs bought these sweet potatoes imported from Japan and they are so sweet, soft and delicious.

Breakkie with Sherilyn and Cass on a Saturday morning – I had char siu Hong Kong chee cheong fun (RM8) and Sherilyn had CCF with prawn filling (RM10). The CCF also had veggies and eggs fillings, but there were too little fillings and we were not quite satisfied with our plate of CCF.

I’ve stopped ordering milk tea coz the strong tea is causing me insomnia, albeit drinking it in the morning. I’ve switched to fresh carrot juice with milk (RM6/glass) instead and it gives me almost the same satisfaction minus the sleepless night.

Still feeling hungry after breakfast as she didn’t finish her plate of prawn CCF, Sherilyn made herself a plate of delicious salad and pan-fried buttered sourdough toast with avocado and parmesan shavings.
