No Excuse Not To Exercise

Finally, my 2 dot com blogs have been revived!   But I am not sure how long they can survive before they pass on again. Their lives are hanging on tenterhooks.

To ensure longevity of my blogs, I need to upgrade the Inode / space for my website by paying a hefty sum to the host. Still deciding if I should do it.  Should I?

Anyway…

It was a very wet morning today. After sending the girls off to the transporter at 6:30am, it started to pour heavily. I could not go to the gym yet as it is only accessible at 7am.   Thus, I went home and worked out on the trampoline instead. It’s been ages since i last worked out on my trampoline. I used to jump on it everyday years ago.

I used to run on the road 365 days in a year, come rain or shine, I kid you not. Those were my pre-ASC (Alycia, Sherilyn, Cassandra) days  when I had a little free time on hand. I would start off my day at 5:30am by running outside the house for half an hour before heading to work! On some days when I could leave the office early, I would run for an hour at the park in the evening, making it a twice-daily exercise regimen. Yup, I was that fit and had an overflowing of stamina.   When it rained, I ran with an umbrella and on other regular days, i ran holding  a baton as protection against muggers.  Later, hubs got me a pepper spray.  I still keep one in my pocket every morning when I exercise, just as a safety precaution.

I took this photo this morning using the timer on my mobile phone.   I took this picture just so to motivate YOU to start exercising today!  And I learned something new today – setting the timer on my phone!

To keep myself entertained while I ran and jumped on the trampoline this morning, I watched BBC and CNN on TV.

To those of you who keep giving yourself excuses not to exercise, stop procrastinating. Start moving your butt today!!  Don’t be discouraged if you feel like you’ve been battered all over on your first few days of exercise. Keep going. You’ll be surprised that your stamina keeps getting better  and in no time, you’ll be as fit as a fiddle!

Remember, persistence pays off. In addition to getting toned arms, legs and abs, you’ll be able to eliminate that muffin top that you’ve been desperately trying to get rid of for years and get a hot bod when you exercise.

* Note reducing carbs and calories work hand in hand in a successful and safe weight loss journey. Remember to eat clean and eat well too.

Exercise needs not be the mundane running or swimming. You can do something fun like trampoline jumping (I love jumping in front of the TV and watch the news, thus killing 2 birds with one stone!), skipping rope, dancing, yoga and much more.  On a tight budget and cannot afford the gym or yoga lessons?  DIY by referring to YouTube! A trampoline does not cost a lot.  The one you see here cost less than RM200. The benefits of exercise are aplenty.  Try getting hooked on exercise and you will see and experience the benefits of exercise first hand yourself.   So wait no further, give yourself a nudge on your butt and start moving!

Mushroom Pasta and Grilled Chicken For Lunch

Lunch for Cass on one of the school days last week…

Mushroom pasta, grilled turmeric and kafir lime leaves chicken drumstick, hardboiled free-range chicken egg and half a cob of sweet corn.  Smoothie of the day and her Izumio hydrogen water.

This Martha Stewart mushroom pasta recipe calls for white wine to prepare the mushroom sauce but I only have red wine at home.  So I substituted white wine with Stone’s ginger wine!  And I did not have enough whipping cream for the sauce, so I used fresh milk and cheese as substitute.  Taste was still robust (I also used lots of garlic) and the girls truly enjoyed their pasta.  Some mushroom pasta recipes include a raw egg on top of the noodles but I’ll definitely skip raw eggs for kids. So I made hard-boiled eggs.

The girls have requested for mushroom pasta for dinner again and I am going to dish this out again on Thursday.  It’s easy peasy to prepare and I like it that I can prepare extra for several meals. This is absolutely the to-cook-meal for busy mothers 🙂

Cass’ Yamaha Piano Lessons

Cass learning musical notes from flash cards that teacher K made.   Cass is being taught musical notes based on do-re-mi rather than ABCs.  Yesterday teacher K flashed the musical notes cards at an alarmingly fast speed, as part of the training in teaching her to do speed sight reading.

 

Cass managed to read the notes at a speed of 32 seconds for about 10 cards.  That is considered slow. And she is to ramp up the speed by next week. So, here’s to more work for me in practising with Cass at home!

Dinner – 24 April 2015

Dinner came very early today as Mandarin tuition class began at 5:45pm at home.  At 4:45pm, I started to work in the kitchen.  After an hour, this is what I churned out…

A big batch of pasta with beef and portobello mushroom bolognese sauce.

I used 2 big packs of antibiotic-free Australian minced beef, 2 big punnets of luschious portobello mushrooms, 1 whole garlic, loads of onions and 5 big juicy tomatoes.  The tomatoes were pulsed for a few seconds with a little water in my Blendtec blender (my most helpful kitchen helper!).

Seasoning used – sea salt, garlic salt, dried rosemary, mixed Italian herbs, black pepper and a piece of rock gula melaka aka palm sugar (the tomatoes were a tad sour, thus the need to use palm sugar).  This time, I skipped the bottled spaghetti sauce (am trying hard to avoid buying bottled sauces), yet the sauce was still irrefutably tasty! If the most persnickety girl says it’s tasty, it really is good!

What you see above can last us for 3 or even 4 meals:
1) Dinner for the girls, the  Mandarin tutor and me today.
2) In the foreground, the pasta in the glass container is to be frozen. That will be lunch for Alycia and Cass next  Friday (Friday is the only day that Alycia does not need to stay back in school and she comes home together with Cass)
3) The sauce in the glass container on the top left hand corner is extra sauce. I can use that for wraps, pizza, pasta or to be eaten with my raw alfalfa sprouts on a weekday for lunch.
4) The sauce sans noodles in the brown bowl is tonight’s dinner for yours truly. I ate only veggies with the beef and mushroom sauce. I don’t take carbs for dinner. I don’t fancy wheat noodles anyway.  They’re empty calories and only make you full and fat.  Sad but true. So if you want to get rid of that muffin top, ditch the wheat noodles first ok?

On most nights when the Mandarin tutor comes to our house, she gets home-cooked dinner on-the-house from me!  She comes in the late evening and by the time the class is over, it will be 9:30pm.  Even if she does not get a proper meal from me, I will get her some buns, which she can eat while she teaches the girls.  Some of you may shoot me for spoiling the teacher but I spoil people selectively, i.e. only those who will not go overboard and take advantage of me will get that privilege. Only people who truly deserve perks get them from me.  I believe that if she is happy teaching the kids, she will put in her all in teaching the kids.  Oh, by the way, Alycia and Cass eat their meals during tuition too, BUT only occasionally and only if easy-to-eat meals are cooked.  I want to create a very relaxed and conducive learning and teaching environment for both the girls and their teacher so that everyone is happy. The kids love their tutor and I think the tutor loves teaching them too 😀

Of Exams and Results – IQ or EQ Is More Important?

As the girls grow, I tend to be less uptight in their exam results. I used to have a hangup and obsession with test results, placing emphasis especially on Alycia as I know that she can be groomed to excel. Lately, I have learned to let go. I don’t revise with her anymore. She prefers to do exam revisions herself in the confines of her own bedroom. I only guide the two younger ones. Not getting an A does not upset me that much anymore, especially if I know that they have worked hard. But it’s a different reaction from me if they do not bother to study or shows a lackadaisical attitude academically and then produce crap to me after the exam! Yes, I can be a tiger mum too!

On Sunday, Alycia suddenly remembered that she had forgotten to inform me of something!

Alycia – mummy, would you believe it if I told you that I got no. 1 in class?

Me – really? Where’s your report card?

Alycia – my friends from xxx class (the top elite class) told me that their teacher told them that I am no. 1 and that I will join them in after-school tuition soon. My Science teacher also hinted something to me.

Me – OH!!

So I’ll see ** tap fingers on table **

Getting first in class is not everything, as with getting straight As. I think having a high score in emotional quotient (EQ) is much much more important for a person to achieve happiness and success in life, agree? I think Alycia has lots to learn in building her EQ.

Yesterday when receiving Cass from the school van, she was holding a bunch of test papers. The moment she alighted from the van, Cass excitedly told me that she scored 100% in her Math test! In fact, she scored As in all her test papers! Though thoroughly overjoyed over her achievement, I know that this is only her very first test and that her tests will only get harder in the exams to come. Furthermore, I know that Cass still needs LOTS and LOTS of drilling in her Chinese language to be able to survive in a Chinese school.

Anyway, I shall seize the pleasures of the moment and enjoy my daughters’ mini achievements and celebrate with them… with rewards for them of course 🙂

Fool-Proof Way Of Tenderizing Beef Steaks Naturally, Anyone?

And so this is the black pepper steak that I pan-fried last night.  It was my first time pay-frying beef steaks.  I had done my homework by googling on ways of tenderizing the meat (with salt for half hour) and how long to pan-fry on each side. I even used a timer to time the 2 minutes frying on each side and pounded the steak with the back of my kitchen chopper but… why was my steak still a tad tough?  It was juicy and tasty and there was still a tinge of pink in the middle but the meat just ain’t tender. WHY???!

I covered my non-stick wok with the glass lid with steam hole that comes with it when frying my steak. Could this be the reason why the steak ain’t tender enough? Does covering the wok during cooking cause a higher temperature and I should then shorten the cooking time to only 1.5 minutes on each side of the steak? Did I make a mistake by covering the wok during cooking?

Why can’t the meat be tender and  juicy like those expensive steaks from hotels and restaurants?   Could it be that they use meat tenderizer? But I don’t like adulterating my food with food additives and chemicals.  I read that citrus juice like lemon and orange  and even papaya and pineapple can tenderize the meat but wouldn’t you think that the steak would taste kooky with a tinge of fruittiness in it?

Despite the steak having a  tough texture (not rubbery texture), the kids loved it nonetheless. They commented that it would be nicer if the meat was more tender.

I still have 6 more slices of steaks in the freezer and I ain’t going to fry them until I find a fool-proof way to produce really nice, tender and juicy beef steaks.  Does anyone have their juicy and tender steak secrets to share with me? Pretty please? :)))

 

Sherilyn’s big bowl of rice covered with dishes (and she topped up more four-angle beans and meat later.  She also ate 1 hard-boiled egg but that’s not in the picture).  After dinner, she chowed down a bowl of ice-cream with strawberries.  She eats SO much it shocks me and I wonder where all the calories go to coz she is still so slim!  Jealous!!

Dinner – 15 April 2015 (Exam Week)

I spent the entire afternoon today helping Cass revise for her Math test tomorrow.  Have you ever tried teaching a language that is so foreign to you to another person who is still very shallow in the language? Like blind leading the blind? Dang it, the feeling is indescribable. Very very frustrating and head-banging-on-the-wall kinda feeling.  And you just wished you had studied the language when you were younger.  We relied heavily online on Line Dictionary (previously known as NCiku) to do the translation from Chinese to English – word for word, so that I could explain the test paper (that I downloaded from another school’s website) to her.

Cass’ Math is pretty good, only if it is in English, where she understands and knows how to read the questions fully. She used to score 100% for her Math in pre-school. Currently, Cass only knows how to read 20-30% of the Chinese words in the test papers, so… she stands a 50-50 chance of getting a borderline pass!  Teaching her Chinese is like attending online classes myself.  After her exam, I will send her to Baobei (gotta fork out another RM400+ per month just on Baobei!!)  for intensive lessons on Chinese word recognition.

Despite a very hectic day, I still managed to squeeze out some time to prepare the girls’ favorite food – seafood noodles.

Soupy meehoon with anchovies, giant prawns, squids, pork balls and tofu fishcake.  Flavor enhanced naturally with chopped scallions, pepper and fried garlic oil.

 

 

I like my meehoon with dark sauce, soy sauce, garlic oil and chopped scallions.

There is extra noodles and soup for tomorrow’s lunch, so one chore is done for tomorrow!

Dinner tomorrow will be pan-fried steak – my first time frying steak and I have just done a quick googling on how to tenderize steak naturally. Wish me luck. I wish the steak will turn out juicy and not rubbery.  I will prepare another simple one-pot dish for the 3  fussy ones, juuuuust in case the steak turns out to be a failure, ha!

HFM’s Version of Thai-Style Grilled Fish

My love for kafir lime leaves was recently renewed when I bought at small punnet from a supermarket near my place.  As I do not use a lot of it it my dishes, I have more than enough to use these leaves everyday, in most of my dishes.  The unused leaves are now kept in a container in the freezer.

I have never  tried grilling fish using kafir lime leaves. Neither have I googled for recipes of fish using lime leaves. I am just too busy to google for everything.   Most of my dishes are cooked without referring to any recipe or measurements. They are ‘simply whack’ dishes requiring some common sense and most times (9 out of 10), my estimation on how much and what ingredients to use has been unerring, to produce a dish with just the taste that I wanted it to be! 😀

My first try with grilling fish with kafir lime leaves was saba fish (mackeral).  I rubbed the fish with turmeric powder, coriander powder, salt, pepper and cut up a handful of lime leaves.  The fish was marinated for about 7 hours.

 

I grilled the fish for 10 minutes on each side at 180C for 1st 10 minutes (fish covered with aluminum foil) and 160C for last 10 minutes (foil unwrapped to expose fish).  I have experimented many times with the timing and finally, I got it right with this timing and method.  This way, the flesh will still be moist.

I threw in some sliced garlic onto the fish in the final 10 minutes. Be careful not to grill sliced garlic too long in the oven as it browns and gets burnt pretty quickly.

 

The outcome was a delightfully aromatic fish (I love everything Thai!) with a hint of Thai flavor. The flesh was moist and not dry. I was sold.  And so this is how kafir lime leaves  earned a spot in my refrigerator!   It is way cheaper than other herbs like basil, thyme and rosemary. And the smell is Thai heavenly!  I should have squeezed in some lime juice and cut up some raw onions too to make it taste more Thai.

Tip: for busy mothers or fathers, you can marinate a big portion of fish, chicken or pork on your rest days with whatever herbs, spices and condiments that you fancy. Store them in individual ziplock bags or plastic bags.  Thaw them in the morning before leaving the house and when you are back in the evening, just crank up the oven or toaster to grill your meat.  You spend less than an hour marinating and organizing your meat once a week and you will have fresh, yummy and hot home-cooked meals everyday!

Symptoms of A Body Detox

About a week after I started taking Izumio hydrogen water and Super Lutein, I started to have rashes on my right arm. The rashes first erupted with an itch, followed by a layer of bumpy rash on the surface of the skin. Irritability and Moodiness
A whole body detox can cause excessive irritability and moodiness. It is actually the toxins in the body that cause this problem in the first place. The severity of this symptom depends on what your lifestyle is like before the detox and how quickly you make the change into the detox.  If you more gradually start a detox and prepare your body ahead of time, you will not be as negatively affected by symptoms.

Other Physical Symptoms
When you begin to detoxify, the cells in your body start to eliminate toxic substances. However, before they make their final exit, the toxins are released into the bloodstream then carried through the circulatory system and this may result in other physical symptoms. Some of these symptoms include:
body aches and pains,
cravings or withdrawal
nausea or vomiting,
clogged sinuses,
constipation or diarrhea,
coughing,
fever,
flu or cold-type symptoms,
bad breath,
gas,
headaches
stomach aches.

According to music therapists, certain tones, rhythms, and vibrations can help treat various medical and behavioral problems. Songs with soothing melody and steady rhythm can also calm a colicky or teething baby.

For kids who have trouble following directions, try turning directions into rhythmic, catchy and sing-songy tunes. Rhythm is perceived differently by the brain, so kids are more attentive when you say things musically.

Babytots@play offer fun & educational music and movement classes for babies, toddlers’ children for age group of 6 months to 4+ years old. Cassandra Turns 7 Today!

This morning while Cass was dressing up for school, I asked her what cake she wanted us to get for her, to which I got this reply…

“I don’t want any birthday cake. I only want to get healed.  What is more important than being healed from incontinence right? Think of how much money you can save on diapers mummy!”

For a moment, I thought I was hearing my own words!  Sometimes it’s amazing to see how matured Cass is for her age.  What she had gone through since birth and what she is going through now has moulded Cass into a very determined person with high levels of maturity.

In school, in one of those moments when her friends just want to poke fun of her in diapers, she will say this “don’t laugh. What if you have this problem and people laugh at you? If you laugh some more, I will tell teacher!!”, to which this will always shut her friends’ mouths.  Despite this issue, she still has many friends because of her amiability and forgiving nature. No one has shunned her out. Her class teacher has even chosen weaker students to sit next to her, so that she can help them. She is also a team leader, overseeing 7 kids in her class. Cass loves school more than anything else. She loves her friends, her teachers and everything about her school… except Mondays.   I am so proud of her!

On Cass’ 7th birthday, I pray that God will hear our prayers.  Last Sunday, during Easter Sunday at church, I saw Cass praying. For once, I saw her praying so fervently — with hands clasped, eyes closed and lips moving. I really hope that Cass’ wish of being 100% healed from incontinence will come true.

Yesterday, Cass attended her first swimming lesson after a half-year hiatus.  The previous swimming teacher (male) was a tad impatient and we saw no progress in her.  She had a phobia whenever she had to turn her head  up to breathe while swimming, thus,  always swallowed water.

The new teacher (female) is extremely patient and good with kids. Cass and I love her, though her charges cost way more than the previous teacher.

 

 

At the end of the swimming lesson, Cass was given  some marbles. She will earn more marbles if her performance is good for that session.  The marbles can be used to redeem gifts from her teacher in future. Cass is so motivated now!
