Creamy, Nutty, Fruity Sandwich

Here is my creamy, nutty and fruity sandwich on 100% wholewheat Massimo bread.  I’ll bet no one could guess what the fillings are for the bread eh?

Wholewheat bread with light cream cheese spread, homemade marmalade jam and young grated coconut — so wholesome, full of fibre and lip smacking.  I still prefer bread for breakfast vs nasi lemak and noodles, which I find are a tad oily and heavy on the stomach as the first meal of the day.

I’ll bet not many people would want to have this for breakfast eh?  Would you?

  1. I would love this sandwich any time of the day as I find bread much easier to eat than rice. Grated coconut – I have difficult buying grated coconut from the shops as I find the tools that they use to grate the coconuts to be quite dirty and since I eat those grated coconut raw, seems to be a hygiene issue.

    Where do you buy your grated coconut?

  2. Mun, I buy my grated coconut from a van that comes to our neighborhood to sell fresh produce everyday. As and when I want fresh coconut milk or fresh grated coconut, I will let him know and he will order it for me from the wholesale wet market. Both the grated coconut & coconut milk look white and clean to me.

  3. Sure beats the chunk of cheese and hardboiled egg which the breakfast I have at work. On days home, a bowl of steelcut oats with an egg and shredded coconut. Nasi lemak anytime!
